Mediterranean Chickpea Salad

Ingredients
1 can (15 oz) chickpeas, rinsed & drained             
2 cloves garlic
3 plump tomatoes, chopped                                                  
3 T. lemon juice
2 roasted red peppers, chopped                            
1 ½ tsp. extra-virgin olive oil
½ sm. red onion, quartered & sliced thin
1 ½ tsp. flaxseed oil
2 T. chopped parsley
salt to taste
 

Directions
In a large bowl, combine all ingredients in order.  Toss to coat well. Let stand for 15 minutes to allow the flavors to blend.
 
Healthy Twist:  Top the salad with 6 Tbsp of feta cheese for a tangy, creamy taste, plus a calcium boosting benefit.
