Middle East Roll-Up

¼ c. hummus
1-10 inch tortilla
½ c. finely chopped broccoli
1/3 c. shredded red cabbage
1/3 c. sliced mushrooms

Spread hummus to within 1 inch of the edge of a 10 inch tortilla.  Scatter over the hummus (off center of the tortilla)  chopped broccoli, shredded red cabbage, and sliced mushrooms.  Fold the edge of the tortilla over the vegetables, then turn in the sides, envelope style and roll up.
