Cheddar Pea Dip

Ingredients
½ c. dry split yellow peas, rinsed
½ small onion, finely minced
1 ½ c. water
1 to 2 dashes Tabasco sauce
2 c. grated cheddar cheese (optional)
Salt and black pepper, to taste
Directions
Combine split peas and water in a sauce pan and bring to a boil. Reduce heat, cover, simmer until peas are very tender, 45-55 minutes. Drain and reserve the cooking liquid.
Place the cooked peas in a blender with the cheddar cheese, onion, Tabasco sauce, salt and pepper. Blend until smooth, adding a little of the reserved cooking liquid to thin as desired.
