1¼ c. chickpea flour
1 c. water
1 egg
1¼ tsp. baking powder
1¼ tsp. baking soda
1 tsp. vanilla extract
A pinch of salt
3 Tbsp. olive oil
Mix together the flour, water and salt. Crack in the egg and mix well. Let batter rest for a few minutes at room temperature. Lightly oil a frying pan with a little oil, heat until very hot and add a ladle of batter. Cook until lightly golden. Turn the pancake over with a spatula and cook for one minute. Repeat with the remaining pancake batter, re-oiling the pan each time. Makes 10 pancakes.
