Hearty Split Pea Sausage and Sweet Potato Soup
1 med. onion, diced
4 med. carrots, sliced
4 celery stalks, sliced
4 cloves garlic, minced
2 med. sweet potatoes, peeled and cut into 1-inch cubes
3 c. dried yellow split peas, picked over and rinsed
1 (14 oz) link Turkey Polska Keilbasa, sliced in to coins
2 (32 oz.) cartons chicken broth (could sub with veggie broth)
1 tbsp. curry powder
1 tbsp. cumin
1 tsp. ground ginger
Salt to taste (optional)
In a slow cooker, add onions, carrots, celery, garlic, sweet potatoes, and split peas. Cover with broth.
Cook on high 4-6 hours until sweet potatoes are tender & soup reaches a thick consistency.
If needed, cook an additional hour.
