Cajun Roasted Chickpeas

Ingredients
1 (15-ounce) can chickpeas, drained and rinsed
2 T. olive oil
1 tsp. Cajun seasoning
Directions
Preheat oven to 350 F. Line baking sheet with aluminum foil for easy cleanup. Drain and rinse the chickpeas and then pat dry with a paper towel. Discard any excess skins that fall off in the washing. In a medium bowl, toss the chickpeas with olive oil and Cajon seasoning and spread out into a single layer on a baking sheet. Bake 50 minutes or until chickpeas reach a desired crunch. Check and stir the chickpeas every 10 minutes to ensure they do not burn. Remove from oven and cool completely. Serve.
