Lentil Quesadillas

Ingredients
1 lb. ground beef
1 c. lentils
1 pkg. taco seasoning
1 lb. cheddar cheese, grated
1 lb. mozzarella cheese grated
flour tortillas
Salsa
Sour Cream
Directions
Rinse lentils in a colander to remove any dirt or foreign matter. In a small saucepan in 2 ½ cups water, add lentils, bring to boil, reduce heat and simmer until very soft, about 45 minutes. Meanwhile brown the ground beef and drain fat. Drain lentils and add them to hamburger, add taco seasoning. Over low heat, with a potato masher, mash the lentils and hamburger together, mixing in the seasoning. Spread about ½ cup of the lentil/meat mixture onto a 7 inch tortilla. Combine the two cheeses and spread about ¾ cup of cheese over the lentil mixture. Press another tortilla on top. In a clean frying pan, or on a griddle over medium heat, fry the “sandwich” until golden brown, turning to cook the other side as well. Cut into wedges. Serve with sour cream and salsa.
