Pea Starch Products
Thunyaporn Jeradechachai formally of Northern Crops Institute (NCI) experimented with 9 products using pea starch formulations for the NPGA.
The experiments consist of: frying batter, pea starch noodles, gluten-free baking with pea starch, marshmallow, soft candies and pea starch as a thickener for soups and sauces such as; terrriyaki sauce, mornay sauce, and dry chili mix.

Pea Starch made from whole peas
Frying Batter Experiment with Fish
Results:
The preliminary study found that pea starch is suitable for frying batter applications. Compared to corn starch, pea starch has a slightly better batter pickup, and provides products with a crispier texture.

Peas Starch Noodle Experiment
Results:
This study demonstrated that pea starch is suitable for making starch noodle. The functionality of pea starch noodle is close to Mung bean starch noodle.

Mornay Sauce
Results and Observation: The original Mornay sauce used wheat flour as the thickener. In this experiment, pea starch, corn starch and wheat starch were used to thicken the Mornay sauce and compared. Wheat flour gave the final product greyish colr, the darkest and thinnest among all the sauce. I was also slightly lumpy. Pea starch gave the sauce white appearance with the thickest consistency. There were no notable difference in flavor between the three sauces.
Pea Starch Noodles with Pea Starch Terriyaki Sauce
Results and Observation:
Thickness of the sauce made with pea starch was found to be higher than th one made with corn starch. Pea starch gelled more than the corn starch when cooked. The differences remained when the sauce was cooled in the refrigerator overnight.
The store bought terriyaki sauce is then and can easily flow while pouring. The pea starch is much thicker.
